Here's a quick and simple pasta recipe that is also very tasty.
Conchigle with Tomatoes & Arugula
4 cups dried conchiglie or farfalle
3 tablespoons olive oil
1 pound ripe cherry tomatoes, halved
3 ounces fresh arugula
salt and freshly ground pepper
freshly shaved parmesan cheese, to serve
1. Bring a large pan of lightly salted water to a boil and cook the pasta until it is al dente.
2. Heat the oil in a pan, add the tomatoes and cook for barely 1 minute. The tomatoes should only just heat through and not disintegrate.
3. Trim the arugula, removing any tough stems. Wash the leaves, drain well, then pat them dry with paper towels.
4. Drain the pasta, return it to the clean pan and add the tomatoes, then the arugula. Carefully stir over the heat to mix and heat through. Season well with salt and pepper. Serve immediately with plenty of parmesan cheese.
And there it is...a tasty and simple pasta.
*Also note that you can use whole grain pasta which is lower in calories.
